Soft + Crispy Pinto Bean Burgers




Today is the end of my first week back at school. What did I learn? I learned that if I am going to be gone from home for 13 hours a day, I need to up my food prep game. I can't just throw a few pieces of fruit and a salad in my purse anymore. All day long concentration requires some serious nutrition, and an apple and a protein bar just aren't gonna cut it.
So I decided that one easy-to-make staple food that can really provide some sustenance throughout my busy days is bean burgers. They also travel well, which is important for me. I threw these together with what I already had at home, so feel free to play with the flavor aspects of this recipe to customize them to your tastes if you make them.

Pinto Bean Burgers

Makes 6

1 can pinto beans
1/4 cup raw hemp seeds
1/4 cup chopped onion
2 T pasta sauce
2 T nutritional yeast
1 T rolled oats
1/2 t chili powder
1/4 t cumin
black pepper

Preheat oven to 350F. Start by mashing the pinto beans with a fork. Then slowly add and mix, add and mix the remaining ingredients in a large mixing bowl until everything is cohesive. Form 6 patties and put them on a baking sheet using a nonstick baking mat. Note: I love having a nonstick mat because it allows me to make recipes without using any excess oil. Bake these for about 30 minutes, or until they are the texture you prefer. Since the beans are already cooked upon starting, you are really just looking for these to cook long enough to crisp up and not fall apart.











































































I really enjoyed the texture of these burgers; they have a crispy finish and a soft middle. These burgers would pair really well with my Zesty Superfood Spread and your favorite burger bun or crumbled on top of a green salad, crouton style.

  2. That nonstick mat really stole the show, good thing you have it! But really, I'mma make some of those for kid watchin. I request a coral REEFresher post. Someday.
