Nutrition Soup

Change, it's in the air. And with it comes stress-- good or bad. Any kind of stress can leave us feeling run-down or even lead to illness. This 'nutrition soup' has everything you need to help battle inflammation, and boost your immune system. Plus the extra boost of vegetables will leave you feeling full, vibrant, and warm. 


My Nutrition Soup has a lot of different powerful plants that offer a lot of protection for our bodies. Every vegetable in this recipe offers something great, but I want to point out some of the key players.

Turmeric | Vitamin B-6, Manganese, Iron, Copper + fights inflammation & infection, prevents cancer
Ginger | Copper, Vitamin B-6, Magnesium + fights inflammation & infection
Fennel | Vitamin C, Manganese, Copper, Calcium + reduces inflammation & aids digestion
Shiitake mushrooms | Copper, Potassium, Folate + boosts immunityprevents cancer
Kale | Vitamins A, K, C + prevents cancer & lowers cholesterol






















Nutrition Soup

    Serves 5 - 6

    8 cups vegetable broth, low sodium
    5 whole carrots, chopped
    4 stalks celery, chopped
    8 oz. shiitake mushrooms, sliced
    2 leeks, sliced
    1 - 3" ginger, diced
    1 - 3" turmeric, diced
    1 bulb fennel, chopped
    1 bunch kale, chopped
    Full-fat coconut milk, to taste (optional)

1. Wash & chop leeks, ginger, turmeric and fennel first. Sauté on high using vegetable broth as needed until soft and aromatic.

2. Wash, chop and slowly add the rest of the vegetables (except the kale) and broth, stirring frequently.

3. After everything is thoroughly cooked, add the kale and continue cooking a couple more minutes until kale is wilted.

4. Serve immediately and enjoy. Stir in an optional spoonful of coconut milk to each bowl for extra flavor and creaminess.
