Hi! Thanks for stopping by. My name is Bailey and I started Lettuce Beet Diabetes in 2014 as a way to be creative and to keep track of all the recipes I create in my kitchen.

I am passionate about food freedom, nutrition, disease prevention, understanding type 1 diabetes, connecting with the type 1 diabetes community, and creating and sharing new recipes. You'll see a lot of these topics weaved into my posts.

I am a Registered Nurse as well as have a Bachelor of Science degree in Nutrition. I am currently working on a Master's Degree to become a Family Nurse Practitioner. I live in lovely Louisville, KY with my husband and our two Aussies, Atlas and Luella.
