Savory Flax Pancake: 3 Ways

It's a savory pancake. Or a pizza crust. Or sandwich bread. Needless to say, this recipe is versatile. And it only requires two ingredients.The ability to be creative in the kitchen, but not stress about the details like complicated directions or long ingredient lists makes mealtime so much more enjoyable. This is why I love simple, tried and true, easy recipes that have the ability to be transformed into completely different dishes. Read on for the recipe!



This recipe isn't something I eat often myself, because I learned a while ago that my body is sensitive to eggs. However, I came up with this recipe for my fiancé, who enjoys these regularly as a quick and easy meal addition. He is also sensitive to chicken eggs, but uses duck eggs in this recipe and that works great for him. If you are not sensitive to eggs, give this recipe a try! It is high in fiber, healthy omega-3 fats, and low in carbohydrates, making it a great option for people with type one diabetes or not. Additionally, this recipe takes no time at all to whip up - making it a great breakfast option in my book. And you only need 2 ingredients, a bowl, a fork or whisk, and a non-stick pan.




Savory Flax Pancake

Serves 1

4 Tbsp. flaxseed meal
1 egg
Rosemary & thyme (optional, to taste)

1. Heat a nonstick pan to medium-high and whisk together the flaxseed meal, egg, and optional spices until thoroughly scrambled.

2. Pour batter into skillet once it is heated and spread batter into desired shape. Let cook for 1-2 minutes, until it can be easily flipped without sticking.

3. Flip pancake and let cook 1 more minute.

4. Dress it up with avocado, nut butter, or veggies for a hardy breakfast toast, pizza toppings for lunch or dinner, or cut your pancake in half and use it as sandwich bread.
