Rosemary Almond Cookies

Rosemary Almond Cookies
By Bailey West
makes 9 cookies

1.5 cups almond flour
1/4 cup butter, softened
2 T coconut sugar
3 packets SweetLeaf stevia
1 egg
1/4 cup almonds, chopped
2 T fresh rosemary, chopped
sprinkle of salt
sprinkle of baking soda

Guys, these are good. I have been on a fresh rosemary kick lately and these delicious cookies are not making me want to quit that kick anytime soon.

Here's what to do. Preheat your oven to 350 degrees. Cream together the butter, stevia and sugar. Then add to that all the rest of the ingredients, ending with the rosemary and almonds.

Form the dough into cookies about 2" in diameter and place them on a cookie sheet. Shout out to my cousin Sara for the really cool eco-friendly baking mat!

Bake them for about 10 minutes. You won't be disappointed.

Josh approves.
